The supply chain: from the tree to your table

Arrived at oil mill, the olives undergo the defoliation and washing treatment using automatic machines equipped with a leaf suction system and a tank for washing with water to eliminate the soil deposited during the harvesting phase.  Then the pressing takes place using continuous cycle crushers.

 

By oil mill we mean both the room where the pressing of the olives is carried out and the mechanical apparatus that carries out the pressing itself. The olives are conveyed into a crusher, inside which they are crushed into small pieces to form a paste. The latter is introduced into a device called a malaxer, in which it is subjected to slow and continuous mixing which has the aim of facilitating the aggregation of the oil microparticles, so as to make them larger and more easily separable from the other components of the paste. .

 

The same is sent to a centrifugal separator called decanter (two-phase system) in which the separation of the oil from the wet pomace takes place, and then passes inside a separator in which the water residues that the decanter has removed are eliminated. left, obtaining an oil rich in polyphenols. It is defined as cold extraction as the temperature of the different processing phases is below 27°C.

The oil obtained undergoes an immediate filtration process in order to eliminate small residues, vegetation water and impurities that are harmful to the oil and to our health which, within a few weeks, would cause a drastic loss of its organoleptic properties. The filtered oil is bottled within 24 hours of collection or stored in steel silos at a controlled temperature and in the absence of oxygen.
